Since 2011, Eddy van Wijk has been farming on the Rengersheerd farm in Leens in North Groningen, the Netherlands. Here he grows carrots, onions, potatoes and chicory. As an intermediate crop, grass with clover is grown to keep the soil healthy and fertile.
