The biodynamic goat cheese farm Saanenhof in Heeze, the Netherlands, was founded in 1980 and is a real family business: Maria and Jan Wanders and their son Jan have a company together. Apart from about 600 goats, they keep 180 breeding animals. The goats get 70 percent raw food from their own land. Manure also comes from their own livestock. The special feature of the Saanenhof is that the family keeps the entire production chain, from grass to cheese, in its own hands. And because Jan Sr. works exclusively with fresh milk, he makes raw milk cheese; from hard Gouda cheeses, with or without herbs, to white mold cheese and brie.
